A great meal for winter!
Cut up a tray of root veggies: pumpkin, kumara, potato, swede, parsnip - you choose. Throw in some mushrooms, large pieces of zucchini and whole peeled garlic cloves.
Smear with olive oil and sprinkle with sea salt, bake until golden. When nearly ready fry up your spinach leaves in a pan with water and a little oil.
Drop in pieces of Almond and Macadamia Feta and stir.
Dish up with your baked veggies and enjoy.
