With a rind of ground black pepper, this cheese is not called "Kick" for nothing. The paste is an attractive ivory colour, smooth as silk, with a delicious "cheesy" mouthfeel.
The cheese is aged for two months, and the rind complements the paste beautifully. If it does prove too piquant, simply cut some of the rind off.
The judges of the 2021 inaugural NZ Vegan Cheese Awards pronounced this the winner in the hard cheese category, saying it was "... a great looking cheese a real punch of flavour!"
