LEBANESE PIZZA

مكونات (Ingredients) ​

  • pizza base of choice (GF wrap used here)

  • Macadamia Smooth

  • cherry tomatoes halved or quartered

  • handful of mint leaves, roughly chopped

  • ground cumin, ground allspice & chilli powder

  • olive oil or oil from Treetop’s Feta, about one tablespoon per pizza

  • 2 tbsp dried thyme and some sprigs of fresh thyme

  • Sea salt 

  • Lemon wedges to serve

 

Mix dried thyme, cumin, allspice, chilli powder, oil and a pinch of salt in a bowl.

Lay out your bases on a grill rack and brush with the flavoured oil.

Divide cherry tomatoes and cheese into four and arrange over the top of each base.

Cook for 5-6 minutes @220, or until the bread has gone crispy at the edges and cheese has melted.

Scatter with fresh mint leaves and fresh thyme and serve immediately with a squeeze of lemon juice over the top.
